2008 Chardonnay
|
This
wine was made from fruit grown on the premium block of Chardonnay in our
new vineyard on the Golden
Highway near Denman. The grapes were picked
at optimum ripeness. This unwooded Chardonnay displays rich varietal
fruit characters and a soft finish.

2008 Verdelho
|
This wine shows good varietal aromas of tropical fruit with
a crisp and refreshing palate. It is a perfect accompaniment to seafood
and chicken dishes or may be enjoyed as a pre-dinner drink.

2008 Rosé
|
We are very
proud of our Rose - the red wine drinkers' white. It is a very light dry
red with a crisp dry finish and good fruit characters. It is an excellent
pre-dinner wine or a refreshing long drink served with soda. It goes well
with salads and similar light meals and is best served chilled.

Velvet
Cabernet
|
A soft, easy drinking Cabernet Sauvignon. Goes well with
Asian food or chilled as a refreshing drink. This is a drink-now wine not
intended for extended cellaring.

Sparkling
Shiraz
|
A sparking deep crimson wine with fresh fruit aromas
complemented by subtle American oak characters. The palate is full
flavoured with a fine balance of tannin and acid giving a crisp dry
finish.

2000 Cabernet Sauvignon
|
A classic Callatoota Cabernet bottled in March 2002 after
two years maturation in large American oak casks. This is a traditional
style with integrated fruit flavours and subtle oak complexity

2003
Cabernet Sauvignon Pressings (Silver Medal)
|
This wine is typical of Callatoota Pressings – deep
colour, well balanced fruit flavours and a big tannin finish. This classic
Callatoota press wine will amply repay further careful cellaring
|

2001
Cabernet Franc
|
This 100% Cabernet Franc wine has a deep brick-red colour
and spicy berry fruit bouquet with subtle oak complexity. It displays
medium weight, round, mouth filling fruit flavours with a nice soft
tannin finish typical of this variety.

2003 Cabernet Franc (Gold & Trophy)
|
This wine was awarded a gold medal and the Trophy for the
best wine in the “Open Red” class at the 2004 Hunter Valley
Boutique Wine Show and was one of three wines competing for “Best Red
of the Show”. It has a deep brick-red colour with subtle oak
complexity. It displays round, mouth filling flavours with a soft tannin
finish typical of this variety.

2005
Shiraz (Bronze
Medal)
|
This is a traditional fruit driven style of Shiraz. The lifted spicy berry fruit is
enhanced with very subtle oak. The palate has great length of fruit with
a lingering soft finish.

Old Tawny
Port
|
A rich, smooth Tawny
Port showing the
benefit of maturation in American Oak casks. It has a deeper colour than
most ports of this style and a complex palate of well aged port with a
good balance of flavour, sweetness and spirit. Goes well with fruit cake!

Bottling Wine
|
Our 2001 vintage Cabernet Sauvignon. We encourage people to
bottle the wine at the winery using our facilities and advice. We can
provide the bottles, corks and cartons for $216 for a 27 litre drum
yielding 3 dozen ($6 a bottle). It takes two people about 30 minutes to
fill 3 dozen bottles.
