Callatoota Estate produces about 10% of the Cabernet Sauvignon fruit grown in the Hunter Valley.
Callatoota is unusual for several reasons:
- The wines are made only from fruit grown in the Callatoota vineyard.
- The Estate is completely self sufficient, having its own equipment for every operation from harvesting to bottling and labelling.
- The red wines are matured in large American oak casks for up to two years before being bottled in the winery.
- After being bottled, the red wines are matured for several years before release.
- Visitors to the cellar door are looked after by John Cruickshank or his partner Laurie Nicholls and their wives Barbara and Geraldine.
